Biryani is one of the most popular of current trending foods on earth. It is simple, it is quick, it tastes yummy. It is enjoyed by millions daily. They are fine and they look fantastic. Biryani is something which I've loved my whole life.

To get started with this recipe, we have to first prepare a few components. You can cook biryani using 28 ingredients and 9 steps. Here is how you cook that.

The ingredients needed to make Biryani:

  1. {Get 500 gms of long grain aromatic basmati rice.
  2. {Make ready 1 kg of chicken (or any other meat).
  3. {Take 5 of medium sized onions.
  4. {Take 1/2 cup of desi ghee.
  5. {Prepare 1 cup of refined oil.
  6. {Take 1 of bay leaf.
  7. {Get 1 of black cardamom.
  8. {Take 1 teaspoon of black peppercorns.

  10. {Make ready 4-6 of cloves.
  11. {Get 2 inch of cinnamon stick.
  12. {Make ready 1 teaspoon of Caraway seeds(Sah jeera).
  13. {Make ready 2 teaspoons of corriandar seeds.
  14. {Get 2 teaspoons of garam masala.
  15. {Make ready 1 cup of hung curd.
  16. {Make ready 2 teaspoons of lemon juice.
  17. {Get 2 teaspoons of mustard oil.
  18. {Take 2 tablespoons of ginger paste.
  19. {Take 2 tablespoons of garlic paste.
  20. {Make ready 2 teaspoons of turmeric powder.
  21. {Make ready 1 teaspoon of red chilli powder.
  22. {Get 2 teaspoons of cumin powder.
  23. {Make ready 2 tablespoons of coriandar powder.
  24. {Get 1 cup of chopped mint leaves.
  25. {Prepare 1 cup of chopped corriandar leaves.
  26. {Prepare 1 tablespoon of milk.
  27. {Make ready 10-12 of Saffron strands.
  28. {Take 1 teaspoon of kewra esence.

Instructions to make Biryani:

  1. First marinate the chicken with yogurt, coriander powder, cumin powder,garam masala powder,red chilli powder,green chillies,salt, chopped mint leaves, chopped coriandar leaves & oil & keep it marinated for at least 1-2 hours..
  2. Then in a pan add adequate amount of refined oil & fry the sliced onions untill golden brown & crisp.Keep aside..
  3. Now cook the meat with some fried onion it it..
  4. Now make biryani masala by adding bay leaf, coriandar seeds, peppercorns,mace, nutmeg,caraway seeds,clove, cinnamon,green cardamoms,black cardamom. First roast them a bit then make a powder out of it..
  5. Add biryani powder to the prepare meat & mix & transfer it in a heavy bottom vessel..
  6. Then cook the rice 80% by adding some salt, clove,mace,green cardamoms, carraway seeds in it. Strain the water completely & pick the used whole spices from rice & throw them up..
  7. Now in that deep vessel where the meat already in there add a layer of rice on the top of the meat and sprinkle chopped corriandar,mint over it then add ghee,saffron soaked in milk,fried onions & finally few drops of kewra esense..
  8. Now cover the vessel with lid and seal the lead with atta dough or aluminum foil paper. Keep a heavy weight over the lid & cook it on a high heat for first 5 minutes then cook it for another 25 minutes on a medium low heat..
  9. After 40-45 minutes open the lid and mix everything together and serve biryani hot with boiled egg & raita..
